Eggfruit (Canistel) Custard Recipe

Canistel (Eggfruit / Egg Fruit) Custard     

 

1 cup ripe canistel mashed  

1/3 cup caster sugar

2 1/2 cups milk (boiling hot)

1 1/2 tablespoon lime juice  

3 eggs

 

 

Beat eggs lightly.  Stir in the mashed canistel (eggfruit), sugar and lime juice.  Add hot milk slowly while stirring.  Pour mixture into greased custard cups.  Add custard cups in a pan of hot water around 1 inch deep.  Bake at 350 degrees F around 35 minutes until custard is cooked.
