Canistel (Eggfruit / Egg Fruit) and Sweet Potato Pudding

1/2 cup mashed ripe canistel (Eggfruit) |
2 cups milk |

1 ½ cups grated raw sweet potatoes |
2 tablespoons butter |
|
2 eggs |
1/2 teaspoon nutmeg |
|
1/3 cup brown sugar |
1/4 teaspoon cloves |
|
1/4 cup honey |
1/2 teaspoon salt |
Peel sweet potatoes and grate finely. Combine the eggs, sugar, honey, salt and spices. Heat the milk and stir in the butter and grated sweet potatoes. Cook in a pan just long enough to heat potatoes then add the grated canistel (eggfruit). Combine the mixture (eggs, sugar, honey, salt and spices) and the canistel (eggfruit) mixture. Mix very well. Pour mixture into a 8x8x2 inch baking pan. Bake in a slow oven set at 300 degrees Fahrenheit for 2 hours. Serve warm.
