Cream of Canistel (Eggfruit) Soup Recipe

Cream of Canistel (Eggfruit) Soup – Serves 6

 

1½ cups canistel (eggfruit) chopped

2 garlic cloves crushed

2 cups milk (low fat milk can be used)

1 tablespoon butter

1 envelope instant chicken soup

1 pinch black pepper

1 medium onion finely chopped

1 pinch salt (or to taste)

½ cup thickened cream whipped

4 cups chicken stock

Finely chopped chives for garnish

 

 

 

Cooking 

Melt butter in a sauce pan. Add onion and sauté until translucent. Add garlic and cook for an additional minute. Add canistel (eggfruit), stock, milk, soup mix, pepper and salt. Cook for 15 minutes, stirring constantly.

Serving 

Garnish with whipped cream sprinkled with chives.
